What's For Dinner?

Colin will be late tonight so that means breakfast for dinner for the girls and I.  I saw a recipe online the other day for sticky buns and had been thinking about them ever since.  We do cinnamon rolls a lot but I don't think the girls have ever had a sticky bun before......they loved them.  Then we always do pancakes on these nights so I had to make a batch of those too.  I also only used half the dough I made for the sticky buns so I decided to make a loaf of cinnamon swirl bread too.

For the buns and bread I just used my normal pizza dough recipe but added a little cinnamon and honey to it to make it a little sweeter.  For the pancakes I cheat and use a mix but added some flax meal and some vanila extract.

We had plenty left over so the pancakes went into the freezer for breakfast on the weekend.  We will eat the cinnamon bread for snack the next couple days.  I am trying to bake more so we are not buying a lot of processed snacks.  The rest of the sticky buns will be heated up tomorrow for breakfast.

Mmmmm.....doughnuts

I was pleasantly surprised to find a lovely package on my front step this afternoon.  My lovely UPS lady dropped of a box from Amazon and my mom and dad sent me the mini doughnut pans I have been eyeing for my birthday.  I managed to hold off for a whole 3 hours before I had to do a little pantry inventory to see if I could come up with the ingredients for one of the doughnut recipes I have been collecting.  I started simple and went with one that uses a cake mix as it's base and it worked out pretty well.  Now, there is no way I would serve these as breakfast as they are really just chocolate cupcakes shaped like doughnuts but, as you can see the girls did enjoy them for dessert tonight.  I love the picture of them peering in the oven, they couldn't wait for them to be done.

Since these were the mini doughnut size it really made quite a bit so I put half in the freezer and frosted and decorated the other half with Halloween sprinkles.   I will do a little more planning for the next batch and hopefully they will be a little more appropriate for breakfast.

Holiday Baking

I am trying not to get too crazy with the Christmas cookie this year since Lily's school just had a fund raiser selling cookie dough and I've now got 20+ pounds of dough in my freezers already. This year I am going to make:

1. Spritz Cookies
2. Chocolate Peanutbutter Rice Krispie bars
3. Frosted Raisin Spice cookies
4. Rolled Sugar Spice cookie
5. Old fashioned roll out sugar cookies that we'll be making with my mom so Lily can help decorate, I'm not brave enough to let her help on my own.
